One of my all-time favorite sauces to pour over pasta is Alfredo sauce. It’s a classic, creamy, dreamy dish that I just can’t resist. However, the traditional recipe is loaded with cheese and butter. Since I began my healing journey from chronic illness, I’ve had to rethink and transform some of my favorite classics into healing-friendly recipes.

This means we’ll have to skip a few traditional ingredients—but that’s where the fun and creativity come in! And lord knows, I love a good creative challenge.

So, how do we achieve that luscious, creamy texture without the usual suspects? The answer lies in a humble yet versatile, antiviral food: the potato. By blending steamed potatoes, we can create a creamy base for our sauce without the need for heavy fats or dairy. To elevate the flavor, we’ll add aromatic herbs like garlic and onion.

This Alfredo sauce recipe is incredibly simple, packed with healing ingredients, and, most importantly, delicious. I’m excited to share my version of a healing-friendly and radical-fat-free Alfredo sauce for you and your family to enjoy!

 

Ingredients:

  • 3 cups Russet or Yukon potatoes, peeled and diced
  • 1/2 large white onion, roughly chopped
  • 6 garlic cloves, roughly chopped
  • 1 garlic clove, left whole
  • 2 tbsp lemon juice
  • 1 tbsp onion powder
  • 1 tsp sea salt
  • 1/4 cup water or salt-free vegetable broth

 

Optional for serving:

  • Freshly chopped herbs of choice 
  • Dried parsley flakes
  • Red pepper flakes
  • Fresh ground pepper
  • Caramelized onions
  • Sautéed mushrooms
  • Roasted or fresh cherry tomatoes

 

Instructions

  1. To steam your potatoes, begin by adding approximately one inch of water to a pot and place a steamer basket inside. Add the diced potatoes to the basket, cover the pot, and steam them for 15-20 minutes or until they are easily pierced with a fork.
  2. Preheat a nonstick ceramic pan over medium heat. Add the chopped garlic and onion, and sauté them dry for 1-2 minutes, stirring frequently to avoid burning. Pour 1/4 cup of water into the pan and continue sautéing. As the water evaporates, add a little more water if necessary and continue sautéing until the onions and garlic are soft and aromatic.
  3. In a blender, combine the sautéed onions and garlic, steamed potatoes, along with one raw garlic clove, lemon juice, onion powder, 1/4 cup of water or vegetable broth, and sea salt. Blend for 2-3 minutes until the mixture is smooth and creamy.
  4. Pour the desired amount of sauce over your cooked pasta. 
  5. Consider adding toppings like freshly chopped herbs, a sprinkle of dried parsley flakes, red pepper flakes, freshly ground pepper, caramelized onions, sautéed mushrooms, or roasted cherry tomatoes before serving. Finish with a squeeze of lemon juice and serve.
