Potatoes have a magical ability to transform—even into cheese! You heard that right. This potato cheese recipe came about from a lazy attempt to avoid the arm workout of mashing potatoes. One day, while making mashed potatoes, I decided to throw them into a blender to save myself the effort. I cranked up the blender and patted myself on the back for my genius idea. What I got instead looked more like glue than mashed potatoes. Yikes! It turns out that blending potatoes releases their starches, turning them into a sticky, cheese-like texture. Oh boy.

Determined not to let my sticky potatoes go to waste, I tried salvaging them by blending in a few herbs and a squeeze of lemon juice. To my surprise, my sticky potatoes now tasted like melted cheese! Whoa! Did I just invent a new dairy-free cheese alternative?

The answer is no. A quick Google search revealed many cheese alternative recipes using potatoes. However, this version has a slight edge since it doesn’t contain nutritional yeast, nuts, seeds, or plant milks, and it’s radical fat-free, making it an awesome option for those on a radical fat-free healing path. 

 

Ingredients:

  • 2 cups potatoes, peeled and diced
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 garlic clove
  • 1/2 tsp sea salt (optional)

 

Instructions

  • Place a steaming basket into a pot filled with approximately 1 inch of water. Add the diced potatoes to the basket, cover the pot, and steam over medium heat for 15-20 minutes until the potatoes are tender enough to be easily pierced with a fork.
  • Combine the steamed potatoes, onion powder, garlic powder, garlic clove and optional sea salt in a high-speed blender. Blend for 1-2 minutes until the mixture achieves a cheese-like consistency. If necessary, add a small amount of water or vegetable broth to aid in blending.
  • Serve over your preferred gluten-free, corn-free, and egg-free pasta, pizza, or over roasted vegetables!

 

Notes: 

This recipe is most enjoyable when consumed fresh, as the cheese-like sauce tends to lose its elasticity and firm up in the refrigerator. However, if you find yourself with leftovers, simply reheating it on the stovetop or re-blending it with a small amount of liquid will bring this potato cheese back to life.
