Ingredients

  • ½ cup split red lentils
  • 2½ cups salt-free vegetable broth or water
  • 4–5 cloves garlic 
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • ¼–½ tsp sea salt to taste 
  • 1 bay leaf (very important—don’t skip!)

 

Instructions

  1. Rinse the lentils thoroughly in a fine mesh colander, removing any debris.
  2. In a saucepan over medium heat, combine the lentils, vegetable broth, garlic, cumin, smoked paprika, sea salt, and bay leaf.
  3. Bring to a boil, then reduce the heat to a simmer. Cover and cook for 25–30 minutes.
  4. Discard the bay leaf before serving.

 

Note: If the lentils still have too much liquid after cooking, remove the lid and let them simmer uncovered until they reach your desired consistency.
