Ingredients
- ½ cup split red lentils
- 2½ cups salt-free vegetable broth or water
- 4–5 cloves garlic
- 1 tsp cumin
- ½ tsp smoked paprika
- ¼–½ tsp sea salt to taste
- 1 bay leaf (very important—don’t skip!)
Instructions
- Rinse the lentils thoroughly in a fine mesh colander, removing any debris.
- In a saucepan over medium heat, combine the lentils, vegetable broth, garlic, cumin, smoked paprika, sea salt, and bay leaf.
- Bring to a boil, then reduce the heat to a simmer. Cover and cook for 25–30 minutes.
- Discard the bay leaf before serving.
Note: If the lentils still have too much liquid after cooking, remove the lid and let them simmer uncovered until they reach your desired consistency.
