In my quest to heal multiple symptoms, I decided to temporarily remove all filler foods from my diet, like grains and legumes, to focus solely on healing foods as listed in Medical Medium books. For a Spanish girl like me, whose heritage revolves around rice and beans, this proved to be easier said than done. However, my symptoms motivated me to stick with it.
During this time, I discovered the magic and versatility of cauliflower. When blended just right, cauliflower surprisingly resembles rice. I combined the riced cauliflower with a tomato sauce and a few herbs, recreating the essence of the traditional Spanish rice I used to enjoy.
This cauliflower rice dish not only satisfied my cravings for grains, but also filled a void in this girl’s soul. Even now, as I can occasionally indulge in some filler foods like grains again, I find myself still choosing cauliflower over grains for its nourishing qualities and continued support on my healing journey.
Tomato Sauce:
- 1 1/2 cup strained tomato sauce (passata)
- 3 garlic cloves
- 1/4 medium white onion
- 1/2 tsp onion powder
- 1/2 tsp sea salt
- 1/4 tsp ground cumin
- 1/8 tsp ground cayenne (optional for heat)
Cauliflower Rice:
- 1 cauliflower head
- 1/2 medium white onion, diced
- 1/2 tsp sea salt (optional)
- Handful of cilantro, finely chopped (optional)
Instructions
- Prepare the Tomato Sauce: In a blender, combine the tomato sauce, garlic cloves, onion, onion powder, sea salt, ground cumin, and optional ground cayenne. Blend until smooth and set aside.
- Make the Cauliflower Rice: Remove the core from the cauliflower head, then roughly chop the cauliflower florets into smaller pieces. Transfer the chopped cauliflower to a blender or food processor and pulse-blend it several times until it resembles rice. If your blender is small or less powerful, you may need to blend the cauliflower in batches.
- Cooking Process: Preheat a large skillet over medium heat. Add the diced onion and cauliflower rice to the skillet, followed by 1/3 cup of water. Optionally, season with sea salt. Next, pour in the prepared tomato sauce blend and mix thoroughly. Cover the skillet and cook for 6 minutes. After 6 minutes, remove the lid, reduce the heat to medium-low, and let it cook for an additional 5 minutes, stirring occasionally.
- Serve: Garnish with finely chopped cilantro and serve.
