Ingredients:

  • 36 oz rainbow carrots
  • 1 cup pure maple syrup
  • 1/2 cup coconut sugar
  • Juice from 1 small lemon
  • 8 garlic cloves, minced
  • 2 tbsp herbs of choice (such as fresh thyme and sage)
  • Salt and pepper to taste

 

Instructions:

1) Roast the Carrots:

Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper. Arrange the carrots in a single layer on the tray. Roast them in the preheated oven for 35-40 minutes until they are tender and slightly caramelized. Flip the carrots halfway through to ensure even roasting. 

2) Create the Glaze:

Heat a nonstick ceramic 10” frypan over medium heat, and dry sauté the garlic and herbs for about a minute. Add the maple syrup, coconut sugar, and lemon juice to the pan. Allow the mixture to heat for about 20 minutes, stirring occasionally to prevent sticking. As it simmers, the glaze will gradually thicken and caramelize; it is ready when it can coat the back of a spoon.

3) Combine and Serve:

Transfer the roasted carrots to the pan with the glaze and toss them gently until they are evenly coated. Season with salt and pepper to taste and serve!
