Child me was not a fan of green peas, but adult me has since discovered how to use them in recipes where I absolutley to love them.  

Pea pesto is a great example of that. It’s light and refreshing and packed with so much flavor. There is no need for nuts or oils since the green peas make it velvety and creamy.

This pea pesto pairs well with pasta, spread on flatbread, or enjoyed as a dip for crunchy crudités or steamed potatoes. It’s definitely a favorite in the community and for good reason. 

 

Ingredients:

  • 2 cups frozen green peas
  • 3 tbsp lemon juice
  • Small handful of basil
  • 1/4 cup fresh parsley
  • 1 tbsp maple syrup
  • 4-5 garlic cloves
  • Freshly ground pepper to taste
  • 1 tsp sea salt (optional) 

 

Optional for serving:

  • Cherry tomatoes, halved 
  • Red onion, chopped 
  • Basil, minced 

 

Instructions

  1. Cook the frozen peas in a pan with a little water for approximately 5 minutes until completely thawed and tender. Alternatively, you may steam the peas in a steamer basket.
  2. In a blender or food processor, combine the cooked peas, lemon juice, basil, parsley, maple syrup, garlic, freshly ground pepper, and sea salt.
  3. Blend until smooth, scraping down the sides as needed to ensure all ingredients are well incorporated.
  4. Transfer the dip to a serving bowl and garnish with diced tomatoes, finely chopped red onion, and minced basil, if desired.

  

Serves 3
